Lazy Little Dumplings

Lazy little dumplings are a very ancient dish, preserved in a handwritten collection of recipes from the time of the Grand Duchy of Lithuania, dating back to the 17th century.

So why are they called "lazy"? There is a legend about a lazy housewife who did not want to shape individual varenyky (stuffed Ukrainian dumplings), so she simply mixed the cottage cheese and flour together.

This dish can be made either savoury or sweet — either way, it turns out absolutely delicious!


Ingredients

  • 500 g cottage cheese (farmer's cheese)
  • 4 eggs
  • 1/2 tsp salt
  • 180 g flour
  • 1 spoonful of raisins
  • 2 spoonfuls of butter

Preparation

  1. Cream the cottage cheese together with the butter, salt, and egg yolks.
  2. Add the raisins and flour, and mix well.
  3. Beat the egg whites until stiff, then gently fold them into the dough.
  4. Turn the dough out onto a floured surface, roll it into a log, flatten it slightly, and make light score marks along the top with a knife.
  5. Cut the dumplings on the diagonal.
  6. Cook in lightly salted boiling water until done (one minute after they float to the surface).
  7. Drizzle with butter that has been melted and toasted with breadcrumbs.
