Orshada, or almond milk, is a plant-based drink made from tiger nuts (chufa), other nuts, or grains. Its predecessor was barley water, which was dark in colour (Lat. hordeum – barley).

The earliest known recipe for "almond horchata" was found in a document dated 9 September 1748, held in the Coleccion Espinola in Valencia. Because almond milk was expensive and a luxury few could afford, almonds were replaced with tiger nuts (13 kg of tiger nuts cost as much as 200 g of almonds).

This ancient Spanish drink has gained tremendous popularity. Today, almond milk has swept across the European market and is enjoyed by those who follow a healthy lifestyle.

Ingredients

  1. 250 g peeled almonds*
  2. 1.5 l cold water
  3. 100 g sugar

Preparation

  1. Cover the almonds with cold water and leave to soak overnight.
  2. Drain and rinse.
  3. Blend the almonds, sugar, and 1 l of water in a blender.
  4. Strain through cheesecloth.
  5. Add the remaining water to the pressed almonds, blend again, and strain.
  6. If desired, you can add cinnamon or lemon zest.
  7. Set the drink aside to chill.
  8. The pressed almonds can be used to make a cream, pastries, or tsvibaк (twice-baked biscuits). /recipes/galushky/
